RECIPES:

Caraway is widely used as a flavoring for seed & seed cakes.
It features in savory dishes, including cabbage soups & sauerkraut.
Caraway seeds are also a staple of savory meat dishes, particularly in roasts & goulash.
The roots may be boiled & treated like cooked parsnips or carrots.
The young leaves can be used in salads or for seasoning soups & stews.
The seeds give rye bread its characteristic taste.
They are also good in potato soup, cheese spreads & salad dressings.

Caraway Tea:

Add 1 tsp of bruised seeds to 1 cup of water, bring to the boil, cover & leave off the heat to infuse for 10 minutes.
Drink before meal times.
It is a warming remedy that is especially effective against stomach cramps. Eases bloating & strengthens the digestive system,helps with acid reflux.

For toothache burn caraway seeds & let the smoke go on your sore tooth.

For stomach ache & abdominal pain fry caraway seeds on pan without oil, until browned.
Make a tincture with vodka.
Take 1 tbsp before meals or with pain.

When you got a cold just before it really kicks off, make a tea with caraway seeds, add a little drop of vodka & drink.
It will make you sweat & stops the cold.

In case of Erysipelas:

Mix mugwort, caraway seeds & rye flour.
Heat it over the pan, not burning it.
Place it in between the cloth & hold on affected part of the body as hot as possible.

Digestive Tea:

Take equal parts of following herbs:
Nettle, caraway seeds, thyme, sage, basil, flax seeds, fennel, coriander.
Mix it all & make a tea with 1 tsp to 1 cup of hot water.
Take before meals for constipation for 14 days.

Caraway Seed Cookies:

400 g butter,room temperature
1.5 tsp salt
2 tbsp sugar
2 tsp caraway seeds
5 eggs
1.5 dl water
700 g flour
For a sprinkle:
Mix 1 tsp caraway seeds with 0,5 tsp of salt
Mix butter, salt, sugar, eggs, caraway seeds together.
Add water & flour,make a smooth dough.
Add more water if needed.
Place into the refrigerator for a few hours.
Form finger wide & - length sticks out of the dough.
Place over the cooking tray, leaving a small space in between.
Brush with egg & sprinkle the caraway seed mix over.
Bake in the preheated oven at 180-200 C for 10-12 min. or until golden brown.

Squash & Red Currant Jam:

320 g squash, flesh grated or cut into small chunks
450 g red currants
200 g sugar
180 ml water
4 g caraway seeds
Place the currants into the pot along with sugar, heat  until juice runs out, add water.
Add prepared squash & caraway seeds.
Heat through.
Pour into sterilized jars, close airtight for storing.

Cabbage & Sausage Soup:

300 g white cabbage
1 leek
300 g swede
2 carrots
3 potatoes
1 tbsp oil
2 tbsp tomato puree
1 tsp caraway seeds
1 tsp thyme
ca 1.5 l water
2 stock cubes, vegetable
1 bay leaf
400 g frankfurters or similar sausages, sliced or cubes
1 tsp salt
basil
Chop all the vegetables.
Fry leek & cabbage in the pot with oil.
Add swede, carrots, tomato puree, caraway seeds & thyme, stir.
Add water along with stock cubes.
Boil for ca 5 min.
Add potatoes & boil further 5 min.
Add sausages, boil 5 min.
Season & when soup is ready, take off the heat & sprinkle basil on top.
