To make coconut cream & coconut milk, peel away the brown skin from the white coconut flesh & place the flesh into a food processor with some hot water. Blend thoroughly, then squeeze the mixture through some muslin or a clean tea towel into a plastic, china or glass bowl (coconut reacts to metal) & set the liquid aside for 20 minutes.
The coconut cream will float to the top of the milk & can be spooned off the surface. 
This process can be repeated to make extra coconut milk. 
One coconut yields about 1 cup of coconut cream.

Use freshly grated coconut in curries & creamy puddings, or lightly toast it with spices & use as a seasoning. 

To toast the coconut, spread the shredded coconut on an unlined baking sheet & bake in a preheated 180ºC oven for 12 – 18 minutes, stirring a few times while it’s cooking, so it toasts evenly.

Coconut Extract:

add several tablespoons of the fresh coconut meat to half a cup of vodka in a small glass container with a tight fitting lid. 
Set it aside in a cool dark place for 7-10 days. 
Shake every day.

Coconut Oil:

Scoop out the meat of the coconut & place the meat into a bowl.
Add 50 % more water to the bowl than you have coconut meat. 
Blend it in the blender until the coconut has a smooth, creamy consistency. 
Place three layers of cheesecloth, one on top of the other, over the bowl. 
Pour the coconut from the blender onto the cheesecloth.
Gather the cheesecloth around the coconut & press out all of the milk.
Pour the coconut milk into the jar. 
Screw the lid tightly on the jar & allow the coconut milk to ferment in a dark place for 2 days.
Move the coconut milk into warm, light area for 6-8 hours,during this time the coconut oil will separate from the coconut milk.
Chill the jar in the refrigerator for 3 hours to allow the oil to solidify.
Scoop out the oil & place it in a container with a lid. 
Allow the oil to thaw in a room temperature environment & then use the oil as you choose.

Take coconut oil 1 tbsp 1-2 times a day with meals.
Can also be used in salad dressings, sauces, or any type of cooking where a source of essential fatty acids is needed.
Taste is very mild & oil melts very quickly in mouth.
In cooking & baking, coconut oil can be used in place of any oil or butter listed in a recipe.

Stomach ulcer: Frequently drink tender coconut water & milk extracted from the kernel.

Mouth ulcers: Mix some coconut milk with honey & massage the gums 3- 4 times a day.
Gargle with freshly extracted coconut milk frequently.

Prickly heat: Grind well 1 tbsp grated coconut along with 1 tsp cumin & apply the paste on the affected areas.

Intestinal parasites: To prevent such infections, add coconut to the daily diet.
