PASSION FRUIT


Long list of health benefits commonly attributed to passion fruit is due to the nutrient, mineral & vitamin content of the fruit, which includes antioxidants, flavonoids, vitamin A, vitamin C, riboflavin, niacin, iron, magnesium, phosphorus, potassium, copper, fiber & protein.

RECIPES:

Enjoy passion fruit on  their own, on yogurt or ice cream.
The fruit can be used in fruit salads, sherbets, ice cream, jams, cool drinks & as concentrates.
Mix it with orange juice.
Passion fruits make the delicious fruit curd to eat on fresh bread, muffins or pancakes.



100 g shortbread biscuits
200 g condensed milk
250 g mascarpone cheese
1 lemon, juice
200 g raspberries
1 passion fruit
Press the biscuits on to the bottom of the serving glasses.
Beat together the condensed milk & cheese until smooth. Add lemon juice.
Spread half of the cream onto the biscuits.
Spoon over the raspberries & top with the remaining cream.
Decorate with some raspberries & passion fruit pulp.
Chill before serving.



175g dark chocolate
5 eggs
125 g sugar
4 passion fruits, halved & scooped out
200 ml fresh cream
2 bananas
Preheat the oven 180C.
Grease & line a swiss roll tin with greaseproof paper, then grease the paper.
Melt the chocolate in the small bowl.
Beat together the egg yolks & sugar until pale yellow.
Fold in the melted chocolate.
Whisk the egg whites with pinch of salt until peaking but not stiff.
Fold about quarter of the egg whites into the chocolate mixture to lighten it, then fold in the rest.
Spread the mixture over the tin.
Bake in the oven about 20 min, then invert the roulade on to a sheet of the greaseproof paper sprinkled with caster sugar & peel away the the lining paper. Cover & cool.
Spread the whipped cream over the roulade. Cover with banana slices & spoon over the passion fruit pulp.
Roll up the roulade, using the paper.
Serve with raspberry coulis.
I must say, I so adore passion fruits...



8 passion fruits
10 g white sugar
1 can sweetened condensed milk
475 ml cream
Break passion fruits in half & empty contents into a bowl. Use a little water to help rinse the juice out of the skins. Mix with hands to soften pulp. Strain through a sieve. Stir in sugar & sweetened condensed milk.
In a chilled bowl, beat cream until stiff peaks form. 
Fold 1/3 of the cream into the passion fruit mixture, then quickly fold in remaining cream until no streaks remain. 
Refrigerate for 1 hour.
Creme de leite: 
250 ml of milk
2 egg yolks
125 g of sugar
3 whole cloves
Dissolve sugar well in milk. 
Beat egg yolks slightly & add to milk & sugar mixture. 
Strain the mixture & cook over low heat stirring constantly with a wooden spoon until it starts to simmer. DO NOT let it boil, it will curdle on you! 
Simmer until the cream thickens, never stop stirring.
Refrigerate. 
To serve, put a couple of spoonfuls of mousse on a plate & spoon the creme de leite on top. 
Use the cloves to decorate the plates.
