SPINACH


Spinach is an excellent source of vitamins C & A, iron & potassium.
Spinach juice is good as a cleansing blood tonic, healing the intestinal tract, hemorrhoids, anemia & vitamin deficiencies.
Spinach boosts eye health & has strong anti-aging properties
The health benefits of spinach include skin care, improved eyesight, regulated blood pressure, stronger muscles & prevention of age-related macular degeneration & hemophilia.
It is also good for treating cataracts, atherosclerosis, heart attacks & neurological disorders.
Spinach improves blood glucose control in people with diabetes, lowers the risk of cancer & improves bone health.
Spinach has a laxative effect & is wonderful in weight-loss diets.
Cooked spinach when taken regularly, protects against cancer.
Raw spinach juice taken twice a day before meals lowers the blood sugar.
Spinach leaf juice, as a gargle, is good for sore throat.
A bowl of spinach every day increases muscle efficiency.
It helps in bone mineralization & exerts anti-ulcerative benefits.
Spinach aids in the healthy fetal development & growth of infants.


PRECAUTIONS:


Spinach is high in oxalic acid, which can bind with iron & calcium & cause your body to absorb less of these nutrients. Consuming foods rich in vitamin C, such as tomatoes, capsicum, lemon juice or orange juice along with spinach can aid this absorption. Spinach is high in fibre, but too  much of it can cause digestive problems such as bloating, gas & cramping.

Spinach has high calcium content, but also contains oxalic acid. The oxalic acid prohibits the absorption of calcium by the body. For this reason, those who have known liver disease, kidney stones or arthritis should eat spinach sparingly.

If the kidneys are unable to remove excess potassium from the blood, it could be fatal. It is important that people with kidney problems do not consume dangerous levels of potassium.

If someone is taking blood-thinners, such as warfarin, it is important that they do not suddenly begin to change the amount of food they eat containing vitamin K, which plays a large role in blood clotting.


RECIPES:

Spinach is a versatile vegetable & can be eaten raw or cooked. 
It is available fresh, frozen, or canned. 
Add spinach to pastas, soups & casseroles.
Lightly sauté spinach in a small amount of extra virgin olive oil. Season with freshly-ground black pepper & freshly grated Parmesan cheese.
Add spinach to a wrap, sandwich, or flat bread.
Make a dip with spinach, such as spinach & artichoke dip or spinach & goat cheese dip.
Add a handful of fresh spinach to an omelet or scramble, or throw a handful into a smoothie.

Watermelon & Spinach Salad:

100 g quinoa
2 tbsp pumpkin seeds
½ small watermelon skin & seeds removed, cut into chunks
80 g baby spinach
1 ripe avocado peeled & sliced
handful of mint finely chopped
50 g feta
juice of 1 lime
1 punnet of salad cress
Rinse the quinoa, then put it in a pan with a fitted lid & cover with cup of water.
Cook, covered, over a medium heat for 15 mins or until fluffy & the water has been absorbed.
Fork through to separate the grains , then leave to cool.
Meanwhile, heat a frying pan over a medium heat & toast the pumpkin seeds for 1 min or until they start to pop.
Tip into a serving bowl or on a platter with the watermelon, spinach, avocado, mint & feta.
Toss through the quinoa , then squeeze over the lime juice with a pinch of seasoning.
Top with the cress & serve.

Spinach, Bacon & White Bean Salad:

12 rashers streaky bacon
4 tbsp sherry vinegar
2 x 280 g jar roasted red peppers, drained & sliced
2 x 400 g cans borlotti beans, drained & rinsed
150 g bag baby spinach leaves
Heat a large pan & fry the bacon each side until crispy.
Remove & drain on kitchen paper.
Keep the fat from the bacon in the pan, add the vinegar & bubble for a few secs before tipping in the peppers & beans.
Season & heat through.
Toss together the spinach, beans, peppers & bacon, then drizzle with a dressing of your choice.

Spinach & Walnut Salad with Blue Cheese Dressing:

75 g blue cheese
4 tbsp crème fraîche
100 g baby leaf spinach
50 g walnut pieces
Mash the blue cheese, crème fraîche & some seasoning in a bowl with 50 ml water until smooth & pourable.
Put the spinach onto a serving plate, scatter over the walnut pieces & drizzle with the blue cheese dressing.
