The health benefits of lemons are due to its many nourishing elements like vitamin C, vitamin B6, vitamin A, vitamin E, folate, niacin thiamin, riboflavin, pantothenic acid, copper, calcium, iron, magnesium, potassium, zinc, phosphorus & protein.
Lemons & lemon juice contain flavonoids which are most famous for its antioxidant & anti-inflammatory health benefits & can help fight the formation of free radicals known to cause cancer.
Lemon helps to prevent diabetes, constipation, high blood pressure, indigestion, as well as improving the skin, hair & teeth.
The health benefits of lemon include its use as a treatment of throat infectionsdental problems , internal bleedingburns, obesityrespiratory disorderscholera.

Lemons are wonderful for fevers, because a feverish body responds to citric fruits better than any other food.
Lemons can be used as a remedy for colds, rheumatism,sore throat, gastric & liver troubles, headache, heartburn, biliousness etc.
Lemon juice taken 3-4 x daily along with garlic cures cough & cold.

Bee Sting:

Remove the sting gently.
Reduce swelling with ice or cold water.

Cover sting with slices of fresh onion, lemon or horseradish.

Lemon juice softens fish bones. If you have swallowed a fish bone, slowly sip some dilute lemon juice.

For aching knees,shoulders,elbows half 1 lemon & rub it over the painful areas before going to bed,wrap in warm & by morning you should feel much better.

PRECAUTIONS:

If you have ulcers, avoid lemons & other citrus fruits.

Those with gastro-esophageal reflux disease may experience an increase in symptoms such as heartburn & regurgitation when consuming highly acidic foods such as citrus fruit, however individual reactions vary.

RECIPES:

Lemons pair well with savory as well as sweet dishes. They are often used with fish, shrimp, scallops, chicken & in many Mediterranean dishes, as well as desserts.

Decoction:

Boil for 5 minutes 1 tsp of fresh lemon leaves or peel.
Drink 1-2 cups per day.
The same decoction can be applied topically to the affected parts 2-3 times a day.

Hot Herbal Cough Syrup: 

½ tsp hot chili powder such as habanero, piquin, or cayenne
1 cup freshly squeezed lemon juice
6 cloves garlic, minced
1 tbsp grated ginger
1/4 cup sugar or honey
Place all ingredients in a blender & puree.
Store in a clean jar in the refrigerator.
This is a remedy for persistent coughs.
Take it in 1 tbsp doses every hour as long as the coughing persists.

Lemonade:

1 3/4 cups white sugar
8 cups water
1 1/2 cups lemon juice
In a small saucepan, combine sugar & 1 cup water.
Bring to boil & stir to dissolve sugar. 
Allow to cool to room temperature, then cover & refrigerate until chilled.
Remove seeds from lemon juice, but leave pulp. 
Stir together chilled syrup, lemon juice & remaining 7 cups water.

Food for low hemoglobin:
1 cup of dried cranberries
1 cup of dried apricots,chopped
1 cup of dried black plums,pitted
1 cup of raisins
1 cup of lemon juice
1 cup of honey
Mince all fruit & mix with honey & lemon juice.
Store in the glass jar airtight in fridge.
Take 1 tablespoon at the morning & another at the evening after dinner.

Lemon Creams



500 ml double cream
150 g sugar
100 g lemon juice

Heat the cream on the saucepan but don't boil.
Scatter in the sugar,then bring to the boil,simmer for 3-4 min.
Remove the cream from the heat & add the lemon juice.
Strain the mixture through the sieve into a jug & divide between 6 ramekins.
Leave to set in the fridge overnight.
Serve with sliced bananas & passion fruit pulp.
Or roasted plums.
Or caramelized pears...

Lemon Tart

225 g flour
115 g butter
2 tbsp icing sugar
1 egg
1 tsp vanilla essence

For filling:
6 eggs,beaten
350 g sugar
115 g butter
grated rind & juice of 4 lemons
icing sugar for dusting

Preheat the oven to 200C.
Sift the flour into a large bowl,add the butter,cut into small pieces & work with your fingertips until the mixture resembles breadcrumbs.Stir in the icing sugar.
Add the egg,vanilla essence & tbsp of cold water,then work to a dough.
Roll the pastry out on a floured surface & use to line a 23 cm tart tin.
Blind bake for 10 min.
For filling,put the eggs,sugar & butter into a pan & stir over a low heat until the sugar has dissolved completely.
Add the lemon rind & juice & continue cooking,stirring all the time,until the lemon curd has thickened slightly.
Pour the mixture into the pastry case.
Bake for 20 min,until just set.
Transfer the tart to a wire rack to cool.
Dust with icing sugar before serving.

Lemon juice can be applied on the skin for the treatment of acne & eczema.
The acid will remove excess build up or oils & clean the pores.
It acts as an anti-aging remedy & can remove wrinkles & blackheads.
Drinking lemon juice mixed with water & honey brings a healthy glow to the skin.
