POTATO


Besides containing carbohydrates, potatoes  contain a significant amount of beta-carotene, vitamin A, vitamin C & B complex vitamins.
Potatoes also contain calcium, iron, manganese, phosphorus, sulfur, copper, fibres & proteins.

Potato is an almost perfect food, lowering blood pressure, maintaining balance of alkalinity & acidity in the body.
The potassium in the potato is strongly alkaline, which makes for good liver activation.
In addition to their vitamin, mineral & fiber content, white potatoes are a good source of antioxidative phytochemicals known as phenols & polyphenols, which may reduce oxidative stress & prevent resulting degenerative diseases.

Potato soup is good in cases of uric acid, kidney & stomach disorders, & for replacing minerals in the system.

Small potatoes cooked in their jackets as vegetable, if eaten regularly, would diminish all chances of stone formation in the kidneys.
Potatoes baked in their skin & eaten with salt, reduces fat in the body.

Raw potato juice or slices helps to heal burns faster.
Boiled potato mashed in milk is an excellent remedy for diarrhea.

An old effective treatment for a dry cough is to use warm, unsalted potato water (water in which potatoes have been boiled), sweetened with honey as a kind of cough syrup.

The starch in cooked potatoes soothes a stomach ache.
Eating some fresh mashed potato or a mild potato soup eases inflammation.
Fresh mashed potato (without milk or butter) helps prevent the fermentative process in the intestines & helps the growth of friendly bacteria in the digestive tract.

Compress of sliced raw potatoes, sprinkled with pepper applied to the forehead for an hour is said to work very well to hold off a migraine as well.

Heartburn is eased by slowly chewing a raw piece of potato, a few sips of milk or a spoonful of raw sauerkraut.

Potatoes are very alkalising & their raw juice can be taken internally to soothe peptic ulcers & excessive acidity.
Take the juice of just one good sized potato per day.

Externally, boiled potatoes can be mashed & applied as a hot poultice to aching rheumatic joints.

Raw mashed potatoes or even just their skins can be used as a soothing & healing plaster for scalds & burns, as well as ulcers, haemorrhoids & badly healing wounds.

Cardiovascular patients should eat their potatoes without salt, to benefit from their diuretic, blood pressure lowering effect.

One of the most important purposes of potato juice is for treating angular cheilitis, a common skin disorder characterized by redness & swelling of the mouth corners.
Apply potato juice on the corners of your mouth to tone down the lesions.
Drink potato juice every day to get enough vitamin B complex, which you need to fight angular cheilitis.

For food poisoning, potato juice works wonders when mixed with pure honey or carrot juice.

Drink 1-2 glasses of raw potato juice daily to treat liver disease, diabetes, gastric ulcer, hypertension & pancreatitis.

PRECAUTIONS:

Potatoes should be avoided if you are suffering from arthritis.
Excessive consumption of potatoes in people with severe renal function impairment may lead to hyperkalemia,although dicing & boiling reduces the potassium content.
Allergic reaction to raw & cooked potato has been documented & includes anaphylaxis. 
GI symptoms (eg, abdominal pain, diarrhea, nausea, vomiting) are generally associated with the consumption of blighted, greening, or sprouted tubers.
If eaten daily, potatoes should be cooked in combination with other vegetables, otherwise they might cause constipation.



RECIPES:

Potatoes can be baked, boiled, or fried & used as mashed potatoes, potato pancakes, potato dumplings, twice-baked potatoes, potato soup, potato salad & potatoes au gratin.

Potatoes are well known as one of the main ingredients of vodka.

Roast or sauté potatoes with your favorite herbs & spices.
Cut a cooked potato in half & scoop out most of the flesh, leaving only the skin with some potato lining. Season the potato skins & after baking them, fill with whatever ingredients you like. 

Boil potatoes & mash until smooth then add cream cheese & garlic.

Bake a whole potato & top with chili & shredded cheese.

Boil potatoes then dice & mix with boiled eggs, celery, onion & mayonnaise for a quick & easy potato salad.

Garlic & Potato Salad:

5-6 small potatoes
2 garlic cloves
small handful parsley
1 - 2 tbsp flax seed oil
Boil potatoes.Cool.
Finely slice the garlic cloves & add the a small bowl. 
Add the chopped parsley. 
Add in the flax seed oil & mix together.
Cut potatoes into smaller chunks. 
Pour the dressing over the top & mix together.

Pumpkin & Potato Soup:

4 white potatoes,skinned & chopped
2 tbsp coconut oil
3 large carrots,sliced
3 celery stalks,sliced
1 small red onion,roughly chopped
5 cloves of garlic,finely minced
2 cups pumpkin puree
1 cup coconut milk
4 cups vegetable broth
1 tsp ground cinnamon
1/2 tsp ground nutmeg
salt & black pepper to taste
Melt the coconut oil over medium-heat.
Add the potato chunks & chopped onion.
Allow the potatoes & onions to cook for 4-5 minutes, stirring occasionally.
Add the sliced carrots & celery,mix well.
Cook for an additional 4-5 minutes.
Add the minced garlic & season with salt & pepper.
Stir all the ingredients well & cook it through.
Now add the remaining ingredients.
Simmer until the potatoes are tender.
Blend the contents of the soup until they reach the desired consistency.
Serve immediately with some cream & greens.

Roasted Potatoes with Sage:

1 kg potatoes, washed, cubed
2-3 tbsp olive oil
salt to taste
handful of fresh sage leaves
2-3 tbsp butter
Preheat the oven 200 C.
In large bowl, toss potatoes, ca 3 minced sage leaves & enough olive oil to coat potatoes. 
Season.
Place potatoes on sheet pan & roast in oven for ca 30-45 min, or until golden brown. 
Turn potatoes at least once during the roasting period.
In frying pan, gently melt butter.
Add the rest of the sage leaves. Fry sage leaves on both sides, until crispy.
Take butter off heat when it is nicely brown & strain to remove any sediment.
Toss potatoes with this butter & fried sage leaves.

Potato Pancakes from Smittenkitchen


Diarrhea: Eat unsalted potatoes mashed with water.

Indigestion: Eat potatoes raw, about ½ cup.

Heartburn & Gas: Drink freshly squeezed potato juice first thing in the morning.

Ulcers: Drink 1 l of potato juice throughout the day, after meals.

Sore Throat: Make a compress by placing hot, mashed, unpeeled, boiled potatoes in a linen or cotton cloth & then apply to affected area.

Burns: Apply cold, crushed, raw potato in the area. If not cold, mix with ice.

Boils: Make a poultice of raw potatoes; apply & change every eight hours.

Constipation: Eat unpeeled boiled potatoes or drink the juice to soothe inflamed tissue & provide bulk to the stool.

Colds & Flu: Fast from all processed foods. Eat boiled potatoes with carrots, onions, celery & parsley.


BEAUTY:

Raw potato paste applied on the face, allowed to dry before washing it off, removes wrinkles, clears the skin & makes it glow.
To treat blemishes, apply a generous amount of cold potato juice on the affected skin once a day.
Apply cold potato juice on sun burnt skin. This gives a cooling sensation that alleviates stinging & pain.
Keep wrinkles at bay by dabbing potato juice gently on the face everyday. This also gives your skin a youthful glow.
For dark circles under the eyes dip cotton balls on potato juice & put them under your eyes every night before going to sleep for a week.
Soak a cotton ball on potato juice & rub gently on tired, puffy eyes & skin.
Potato juice is a natural skin lightener. Mix it with lemon juice & apply on the dark areas of your skin. An alternative is mixing potato juice with cucumber.
Use face mask with potato juice & curd to hydrate the skin & reduce signs of aging like fine lines.
Mixing potato juice with olive oil can help get rid of crow’s feet & dark circles under the eyes.
For dry skin & skin protection against toxins apply potato juice on your skin, or drink 1 glass every day.
Drinking potato juice can also treat eczema.

Under-eye Circle Treatment:

Lie down & place chilled potato slices over your eyes for 10 minutes or longer to reduce the appearance of dark circles.
Grated frozen potatoes also work well as an eye pack or poultice.

Smashed potatoes & even water in which potatoes have been washed, are very good for softening & cleaning skin, especially around the elbows & the back of the hands.

Potato Juice can be used to Grow Hair Faster:

Mix the juice with egg white & honey.
Apply on your hair & let it stay there for 2 hours.
Rinse off with mild shampoo & then with water.

Mixture of aloe vera & potato juice can bring back the healthy shine of your dry & frizzy hair.

For gray hair use potato juice to rinse off shampoo from your hair, as this will help darken gray hair & also give it a beautiful glow.
